Another Monday, another meal….number 2….here goes.
We have being trying different meals in the old house. January, healthy eating and all that. So this is one of the meals we actually all enjoyed. The reason I tried this was because we had some chestnuts left over from Christmas and I wanted to use them up. This is gluten free, vegetarian and uses goats cheese and was absolutely delicious! It’s also a really quick meal to make for a midweek mayhem of family life.
Stuffed Peppers a la chestnuts (sounds better don’t you think!) serves 4.
Dice one red onion, one white onion, chestnuts (already cooked and peeled) and some chestnut mushrooms (you could use any type) and fry in some coconut oil until cooked.
Meanwhile, half the peppers (one each) and carefully scoop out the seeds.
Fill each half with the cooked mixture and put a generous helping of goats cheese on top.
Pop into the oven for about 15 minutes on about 180 degrees C or until the cheese starts to go lovely and golden.
Serve with a green salad or with bread and potato waffles if you have teens.
