This meal is absolutely yummy and so easy to make. I’m not sure where the recipe came from originally but it is a favourite for midweek.

It’s called Hunters Chicken and is a healthy version of the much-loved pub classic.

 

For the sauce you will need:

3 shallot onions chopped very finely.

1 teaspoon of chilli powder (less if you don’t like it too spicy)

Fry the onion with the chilli powder in a little coconut oil. Then add these ingredients:

4 tablespoons balsamic vinegar

sweetener to taste (I only use about 2 teaspoons)

2 teaspoons of Worcestershire sauce

Let the sauce simmer whilst you prepare the chicken.

Wrap chicken breasts (as many as you need for your family) in bacon.

Put each breast into individual pie dishes or all together with the sauce. Make sure to make a cut along the chicken breast so that the sauce can penetrate the chicken. This ensures it cooks thoroughly.

Cook in the oven at 180 degrees centigrade for approx 15 minutes.

Take them out of the oven and add grated cheese for the topping. I use cheddar but you could use goats cheese or another personal choice.

Cook for an additional 15 minutes or until the chicken is cooked.

 

Serve with a baked potato and salad or green veggies. Yum 👅
