Here we are on another Monday!

During half term, you need quick and easy meals that you can rustle up whilst trying to do other things….so here is another meal that is quick, easy and healthy for those busy, midweek days.

This is called Cola chicken and I think it was originally a recipe that came from a slimming



My hubbie and I think this is too sweet so we add chilli powder or paprika but young children love this.

You will need:

1 onion finely chopped and fried in coconut oil until soft.

Add 4 chicken breasts cut into small pieces (or more if you have a larger family), 3 peppers of any colour and fry for 4/5 minutes.

Add 2 garlic cloves chopped, 1 can of diet cola, 2 tsp Worcestershire sauce, 4/5 tbsp tomato puree, 8 tbsp passata or tinned tomatoes, 200ml chicken stock, a good dash of soy sauce and a pinch of mixed herbs. Bring this all to the boil, lower the heat and simmer for 15 minutes.

Add sugar snap peas or garden peas (or sweetcorn) and cook on a higher heat for 12-15 minutes.

Serve with a salad, bread rolls or rice.
