This is Monday Mayhem Meal nos 7….already! How the weeks have flown.

Now, I will confess that I have exhausted my usual meal repertoire. You know, the weekly meals that you churn out week after week. There is one more that we cook every week as we all love it and that’s Chicken Fajitas. It’s not the most complicated meal and I’m sure other families eat this too but it is loved by all in the old house, hence it’s eaten weekly. it’s also quick and home made so healthy and enjoyable. This will feed a family of 4 (remember I have teens who eat quite a lot!)

Dice 2 garlic cloves and a small piece of ginger and fry in some coconut oil for a minutes and then add 1 or 2 chopped onions. Fry until soft.

Cut 4/5 chicken breasts (or more if you have a large family) into strips. Add these to the pan and fry together with the onions.

Add 2 chopped red peppers (or green but I like red!) and 2 teaspoons of Sambal (crushed red chillies). If you haven’t any Sambal add one chilli or chilli paste to taste. We like it with a little kick so you may like to add less or none for young children.

Let that cook until the chicken is cooked thoroughly. Meanwhile make some Guacamole. put one avocado in a blender (take out the stone) with 4 or 5 mini tomatoes, salt to taste and lime juice (1 lime).

Set the table with tortillas, your homemade Guacamole, salad, salsa, grated cheese and the hot chicken mix. Add vegetables of your own choice. Make your own tortillas and enjoy!
